Salmon tartar with caviar, sour lemon creme, pickled white onion, watercress and root vegetable chips

 

Main course:
Raindeer outer fillet with oxtail gravy, served with buttered chantarelles, cauliflower puree, leek stomp & Västerbotten

 

Dessert:
Bavaroise with licorice and lemon, our own liquorice icecream, liquorice meringues, lemon curd and almond biscuits
